Kylling eller svinekød med Jamaican jerk

Method

1. Rinse the joint under cool water and pat dry with paper towels. Then place in a large dish and, using a small, sharp knife, make some shallow cuts into the meat (about 2 cm deep). This will help in the marinating process.

2. Pour 1 cup of the jerk marinade over the pork loin, then using your hands, massage and work it well. Cover and leave to marinate for at least 5 hours in the fridge.

3. Take the pork out of the fridge about an hour before you start to grill, to allow it to come back to room temperature. Reserve the spare marinade mix for basting. Allow the barbecue to flame and die, before bringing the temperature to about 300 degrees fahrenheit (150 degrees celsius) and brush the grate with some vegetable oil.

4. The goal is to slow cook this so you have 2 options. Grill on the top level grill or warming rack, or grill with indirect heat (with the flame on one corner of the grill surface and the meat on the other).

5. For the next 2 hours, baste every 20 minutes and turn the joint, so the meat cooks evenly.

6. Remember to try to maintain the 300 degrees, keep the lid on the grill closed. You will notice that it will start going dark and have a sort of burned look. Good jerk is supposed to have that sort of colour.

7. Rest the joint for 10 minutes before slicing into chunks. Serve with Festival Bread (see below).


Ingredienser

(til 4 pers)

For the marinade:
35 g Jamaican Jerk Spice Mix
3 scallions (spring onions)
3 tablespoons soy sauce
1 tablespoon brown sugar
2 tablespoons vegetable oil
2 tablespoons vinegar
1 white onion
1/4 cup orange juice
1 teaspoon grated ginger

Chop the onions roughly and place in a food processor with all the other ingredients and pulse until smooth.

Then:
1 boneless pork loin (about 2 kg) with a little of the fat on
2 cups of the jerk marinade

Tip. You can also use chicken thighs and drumsticks
